Vegan blueberry pancakes

Ingredients

200gr flour 
60gr brown sugar 
1 tsp baking powder 
250ml almond milk 
1 tbsp peanut butter 
2 tbsp sesame oil 
1 banana 
300gr frozen blueberries 

Step 1

Defrost the blueberries and blend finely in a blender. Strain the mixture to get rid of the blueberry peel. Add a little water until reaching a consistency similar to a juice. 

Step 2

Crush the banana. Mix flour, sugar and baking powder together, then add the banana puree, the peanut butter, the oil and the milk. Stir everything together. 

Step 3

In an oiled pan, lightly brown two pancakes. Add 1 tbsp of blueberry juice to the mix and stir well. Cook two more pancakes with the new mix. Contunue adding 1 tbsp of blueberry juice each time until you run out of pancake mix. 

Step 4

When it’s time to serve, use a cutter to refine the pancakes and better see the colours. Pour some caramel on top and taste while it’s still hot.
